I'm curious about NonSport sets that had cards printed but never got released.

Rittenhouse planned a Get Smart set back in the early 2000s. One autograph card was printed and signed before the set was cancelled. I think Rittenhouse gave the signed cards away to dealers to hand out to collectors.

Yes, it was Bernie Kopell (best known as Doc on "The Love Boat") as Siegfried from KAOS.
I have one. If I'm not mistaken, they are all slightly oversized. The way Rittenhouse has managed to have on-card autos that are usually in at least near mint condition is to send oversized cards to the actors for signing, only to cut them down to regular size once they receive them back. Since these never went into packs, Rittenhouse didn't bother to cut them down.

Numerous full sets that were planned, then cancelled, have seen their "hit" cards, which are apparently produced before the base cards, released as separate issues, usually in premium packs (packs with only inserts or hits, no base) or else as expansion sets. These include Conan, Six Feet Under, Six Million Dollar Man, and Umbrella Academy, to name just a few from Rittenhouse, plus Orphan Black and Rick & Morty from Cryptozoic, and Warcraft and Doctor Who from Topps.

There was a cancelled "Arrested Development" set by Cryptozoic back in 2016. There were 4 signed cards already completed and some sketch cards completed. Then in 2019 Cryptozoic gave those cards away as prizes at a convention.

There is a thread on that set here on blowoutcards if you feel like digging. A large handful of sketch cards from the set were just sold on ebay this past week.

I'd love to know more about Rick & Morty from Cryptozoic.
I thought this was an official release?
Do you mean that "Season 3" was in development, then cancelled?

Yes, so incredibly fickle are non-sports collectors, that the Season 1 set was released to instant acclaim, sold out immediately (with sealed boxes doubling in price) only to be followed by the excellent Season 2 set selling in a manner lesser enough that it evidentally caused Cryptozoic to put the whole endeavor on ice and instead release the sketch & autograph cards originally intended for the full Season 3 set in the form of premium packs.

Marvel Metal Universe Rogues Gallery was cancelled, though some completed APs have made their way onto the secondary market.

Yeah, if we're talking promo cards that were released for sets that ended up not being issued, that number is probably in the hundreds, if not thousands.
From Topps alone, the E.T. Widevision and Bettie Page Illustrated sets would've been great.

the March 2019 announcement of Chasing Amy trading cards were set to first release on August 2020 and are still on pre-sale
