Chemical Engineer...then it again, it depends on HOW you apply that degree to how high paying it is :)

The degree doesn't matter. Any degree can be high or low paying depending on how you use it. Going the other way a few of my friends who didnt go to college all make over 100k a year because they had a passion for certain fields that they have now started businesses in.

Mathematics, computer design/engineering, accounting/finance will eventually get you there, and actuarial science as well.

medical doctor, but med school is expensive as balls.

Not true. My wife got her nursing degree a year and a half ago and still no full time job. Not what it used to be.

Most paying is not determined by a paper. Itll come from experience + performance.

If its about constant demand? 5 catagories..

1.Doctor
2.Lawyer
3.Engineering (all)
4.Accountant (CA/CMA/CGA)
5. Trade (HVAC/Gas fitting/Electrician/Plumber)

All are always in demand and pay really well. $$ are determined what you do once you are qualified to work in the field.

Sure it is
The issue is people feel they deserve job X and ignore job Z
Elderly homes are always hiring. Not the glory and care you want to give, but the jobs are there. Lower her standards

Accounting...

Recession proof as well until the IRS decides taxes aren't required or they do away with Audits

CPA if you've got it at least.

Aerospace Engineering is the one I'm aiming for.

Edit: Make sure that you're doing something you at least kind of like. I think it would suck to have a job you hate for your entire life.

politics and law... those are the richest people on the planet. They change the laws to make themselves richer. Everyone else. EVERYONE, has to bow to their taxes and fees and laws.

Ok, so let's be a bit more specific here. It does depend on what degree you're talking about, but in this case I believe you are talking about undergrad/bachelors degree. In that case, I'd say economics, finance, accounting, engineering and sciences are up there. For those who threw out "doctor", "lawyer", etc....yes, true, but those are advanced/graduate degrees, so they come after all the aforementioned undergraduate degrees.
