We have a max of 12 starts per matchup. I know on the LM note it states to monitor your and opposing teams starts. Is there anything that tells you how many starts have been used? Maybe I'm missing something.

If you go to your matchup you can see your team and the opponents team and at the very bottom it shows how many starts you have done and have left

And yes, max starts (as well as matchup acquisitions) are automatically scaled up for week 1 and AS break matchups that are longer than 1 week

Yeah, but that's only because this match up is longer than usual. Most match ups are only a week long.

Well I can relate after losing Edwin Diaz, raisel Iglesias, O’Neal Cruz, and seiya suzuki, (Shane Baz, Harrison bader, grichuk also injured prior to start of the year), but considering how half my team can’t seem to avoid negative points, my squad would be pretty putrid with or without them.
